Wholemeal Yoghurt & Fruit Scones
Ingredients
225g/8oz wholemeal flour
1 tsp salt
1 tsp bicarbonate of soda
25g/1oz margarine
55g/2oz brown sugar
55g/2oz raisins
55g/2oz sultanas
150ml/5fl oz Roskilly's natural yoghurt
Method
- Place the flour, salt and bicarbonate of soda in a bowl.
- Rub in the margarine till it looks like breadcrumbs, then stir in the yoghurt, brown sugar and raisins to make into a soft dough. Roll out to 1cm/_in thick and cut into rounds using a 5cm/2in plain cutter.
- Place on a baking sheet and brush with a little milk. Bake at 220C/425F/Gas 7 for 7-10 minutes until well risen and golden brown.
Authentic Mango Lassi
Ingredients
100ml/3_fl oz single cream
200ml/7fl oz full fat milk
400ml/14fl oz Roskilly's natural yoghurt
400ml/14fl oz mango pulp
4 tsp caster sugar
Method
Put all the ingredients in a blender and blitz for 30 seconds, then serve over ice, Easy!!!!
Baked Alaska
Ingredients
1 scoop of your favourite Roskilly's ice cream, frozen yoghurt or sorbet
1 shop-bought sponge case
3 egg whites
55g/2oz caster sugar
icing sugar, for dusting
Method
- Preheat the oven to 220C/425F/Gas 7.
- To make the meringue topping, whisk the egg whites till they form stiff peaks, reduce your whisk speed and slowly add the caster sugar until the mixture forms stiff peaks once again.
- Spoon into a piping bag with a star nozzle.
- Place the sponge on a chopping board and, using a cutter, cut out a disk about 1/3rd bigger than the scoop of ice cream you're going to use.
- Place a ball of ice cream / yoghurt / sorbet on the centre of the disc, ensure the ball was scooped then re-frozen so it's solid.
- Pipe the meringue over the sponge base and ice cream, making sure there are no holes whatsoever. This is really important, any holes will allow warm air into the Alaska and ruin it.
- Place the Alaska on to a non-stick baking sheet into the pre-heated oven for about 10 minutes until the top has turned golden-brown.
- Finally, just before serving, dust the Alaska with icing sugar
Yoghurt & Herb Marinade
Ingredients
150ml/5fl oz Roskilly's natural yoghurt
2 tbsp chopped fresh mint
1 clove garlic, peeled and crushed
_ tsp ground turmeric
the zest and juice of 1 lemon
Method
- Place yoghurt in a bowl,
- In a pestle and mortar, pound all the other ingredients to a paste then stir into the yoghurt.
- This is an ideal BBQ marinade, or even for chicken to be fried off before being cooked in the oven. But it's best for marinating monkfish tails, before roasting them whole in the oven.
